Cross Stitch Dilemma

Hi, everyone! I'm new to the forums (and in the process of opening a shop here). I'm hoping to get some advice on a project I'm starting. It's a cross stitch pattern called Mendocino Twilight by Marty Bell.

The pattern calls to stitch the piece on  light blue cross stitch fabric. Would it be okay to stitch it on white fabric instead? It appears the entire design is cross stitched (no areas of background fabric will show). Does fabric color choice matter in a design that is completely stitched? Is anyone familiar with this design that could lend advice?

I have to think way, way back on this one. I haven't cross-stitched in years. The color doesn't matter so much but just be sure it's the right size as far as the weave goes. Am I making sense even? It's been well over 20 years, so I am very rusty. ???
